Bacon and Arugula Sauté

Ingredients

Servings:
4Slices Fake or thick-sliced bacon
2Tbsp Olive oil, if using fake bacon
2Medium Garlic cloves, minced
4Cups Arugula
2Tbsp Fresh thyme leaves
1Tbsp Lemon juice, fresh
.25Tsp Kosher salt
.5Tsp Black pepper, freshly ground
.5Tsp Red pepper flakes, more or less to taste

Instructions

Bacon and Arugula Saute nutrition infoCook the bacon over medium-high heat, stirring occasionally, until crispy and rendered, about 8 minutes. If using fake bacon, cook according to package.

Add the garlic to the skillet with the (real) bacon and cook until fragrant. Add the arugula and thyme and cook until the arugula turns bright green and just begins to wilt. Remove the skillet from the heat, add the lemon juice, salt, pepper, and red pepper flakes and stir gently. If using fakon, crumble over top right before serving to keep it crisp.

Sprinkle with goat cheese or serve as is with eggs of your choice – we like “egg in a nest.”
