
Ingredients
4 | Slices Fake or thick-sliced bacon |
2 | Tbsp Olive oil, if using fake bacon |
2 | Medium Garlic cloves, minced |
4 | Cups Arugula |
2 | Tbsp Fresh thyme leaves |
1 | Tbsp Lemon juice, fresh |
.25 | Tsp Kosher salt |
.5 | Tsp Black pepper, freshly ground |
.5 | Tsp Red pepper flakes, more or less to taste |
Instructions
Cook the bacon over medium-high heat, stirring occasionally, until crispy and rendered, about 8 minutes. If using fake bacon, cook according to package.
Add the garlic to the skillet with the (real) bacon and cook until fragrant. Add the arugula and thyme and cook until the arugula turns bright green and just begins to wilt. Remove the skillet from the heat, add the lemon juice, salt, pepper, and red pepper flakes and stir gently. If using fakon, crumble over top right before serving to keep it crisp.
Sprinkle with goat cheese or serve as is with eggs of your choice – we like “egg in a nest.”
