Banana Pancakes

Ingredients

1Medium Banana
2Large Eggs
.5Cup Instant Oats
.5Tsp Baking Powder
.5Tsp Cinnamon, ground
1Tsp Chia Seeds (optional)

Instructions

Combine everything in a blender or food processor and mix well. Heat a griddle over medium heat, grease with butter or coconut oil and scoop 1/4 cup batter onto griddle. Cook until bubbles form and pop on top, then flip and quickly cook until golden brown.

Remove from heat and serve layered with seasonal fruit and a high-protein yogurt, like Siggi’s. Serve warm with honey or maple syrup. *Please note: nutritional info is for pancakes only – it does not include fruit or toppings!

Makes six pancakes.
