Banana Caramel Bread Pudding

Ingredients

4Large Eggs
1.5Cups Almond Milk (can substitute any milk)
.5Cup Half & Half (can substitute cream)
1.5Tbsp Sugar, granulated
2Tsp Vanilla Bean Paste
.125Tsp Kosher Salt (a pinch)
2Large Sesame Bagels or 8 slices of other bread, preferably dense or sweet like a cranberry white chocolate bread (two day old works perfect!)

Instructions

I like to use bagels in my bread pudding and let them soak in the custard overnight. The result is a creamy, yet firm, bread pudding. Almost any fruit and sweet syrup can be substituted for an endless variety of make-ahead breakfasts or desserts.


In a medium bowl, whisk together eggs, half & half, milk, sugar, vanilla, and salt.

Cut bagels into large 1″ cubes and add to a container preferably one with a lid. Pour custard over the bread cubes and toss until each piece is covered. Cover container and place in fridge for at least 30 minutes if you’re using light, fluffy bread (challah, white, white) and two hours for dense breads (bagels, rye, pumpernickel). Can leave overnight for less morning prep. Stir once.

Pre-heat oven to 400 degrees.

Make (or use store purchased) caramel sauce and add 1/2 cup to each of the bottoms of two 8-9″ ramekins.

For Banana Caramel Bread Pudding, slice four bananas and add evenly on top of caramel.

For White Chocolate Caramel Cranberry Bread Pudding, add two tablespoons of cranberry syrup on top of the caramel. Optional: layer scoops of custard-soaked bread with one tablespoon white chocolate chips per ramekin.

Spoon custard-soaked bread cubes into the ramekins, filling them to the top. Lightly drizzle 1/2 tablespoon caramel sauce and if baking the cranberry version, drizzle one tablespoon of cranberry syrup on top as well.

Cover and bake for 25 minutes. Remove cover, rotate and bake another 20-30 minutes. Remove from oven and let cool for 5-10 minutes.

Top with ice cream, yogurt (I prefer high-protein Siggi’s yogurt), or whipped cream and a drizzle of caramel sauce.
