2 | Cups Cherries, frozen and pitted |
3 | Tbsp Maple Syrup, pure |
2.5 | Cups Rolled Oats (not quick cook) |
1 | Cup Crisp Brown Rice, organic, or Rice Krispies |
.5 | Cup Pecans, roughly chopped |
.5 | Cup Pepitas |
1 | Cup Coconut Flakes, unsweetened and unsulfered |
.25 | Cup Chia Seeds |
.25 | Cup Amaranth Seeds |
2 | Tbsp Flax Seeds, ground |
.5 | Cup Cacao Nibs |
2 | Tbsp Cocoa Powder |
2 | Tbsp Cinnamon, ground |
1 | Cup Protein Powder |
Instructions
Preheat oven to 200º. Cover two baking sheets with parchment paper.
In a small sauce pan, combine cherries and maple syrup over medium-high heat. Bring to a boil then turn heat down to low and simmer for 20 minutes. Remove from heat to cool.
Meanwhile, in a large bowl combine the remaining ingredients.
Make a well in the center of the dry ingredients and pour in the liquid mixture. Mix well. The mixture should be fairly dry and take some time to combine completely.
Place mixture on prepared pans and place in over for 50-60 minutes. Remove from over and let cool completely before placing in a Tupperware-type container. Will last a couple of months in a properly sealed container.
