Chocolate Cherry Pecan Granola

Ingredients

2Cups Cherries, frozen and pitted
3Tbsp Maple Syrup, pure
2.5Cups Rolled Oats (not quick cook)
1Cup Crisp Brown Rice, organic, or Rice Krispies
.5Cup Pecans, roughly chopped
.5Cup Pepitas
1Cup Coconut Flakes, unsweetened and unsulfered
.25Cup Chia Seeds
.25Cup Amaranth Seeds
2Tbsp Flax Seeds, ground
.5Cup Cacao Nibs
2Tbsp Cocoa Powder
2Tbsp Cinnamon, ground
1Cup Protein Powder

Instructions

Preheat oven to 200º. Cover two baking sheets with parchment paper.

In a small sauce pan, combine cherries and maple syrup over medium-high heat. Bring to a boil then turn heat down to low and simmer for 20 minutes. Remove from heat to cool.

Meanwhile, in a large bowl combine the remaining ingredients.

Make a well in the center of the dry ingredients and pour in the liquid mixture. Mix well. The mixture should be fairly dry and take some time to combine completely.

Place mixture on prepared pans and place in over for 50-60 minutes. Remove from over and let cool completely before placing in a Tupperware-type container. Will last a couple of months in a properly sealed container.
