Egg in a Nest

2large Eggs
2thick Bread slices – day old bread works great

Instructions

I like to buy a loaf of day old bread for this recipe. This way, you can cut the slices as thick as you need to get the egg to fit in the hole. Why day old? Because you’re toasting it anyway!

For a 1″ thick piece of bread, cut a 2″ round(ish) hole in the center.

Heat up a griddle and butter it. Place the bread slices on the griddle and cook until golden brown.

Flip the bread and crack an egg into each hole. Cook until egg whites are firm. If you do not like runny eggs, cover with a large saucepan lid immediately after adding the eggs, and cook until yolks are firm.

Remove from heat and serve immediately. I typically serve this dish with bacon and arugula sauté and fresh fruit.
