.25 | Cup Oat Meal/Flour |
.25 | Cup Whey Protein Powder (or more oat meal/flour) |
.5 | Cup Old-fashioned Rolled Oats (not quick cook) |
.5 | Tsp Baking Soda |
.25 | Tsp Kosher Salt |
.25 | Cup Honey |
.25 | Cup Siggi’s Touch of Honey Yogurt |
.25 | Cup Creamy Peanut Butter |
.5 | Tsp Almond Extract |
1 | Medium Bananas, ripe and cut into small pieces |
.25 | Cup Chocolate Chips (can substitute Cacao Nibs) |
Instructions
Preheat oven to 325º. Line two baking sheets with parchment paper.
In a stand mixing bowl, combine honey, peanut butter, yogurt, and extract.
In a separate bowl, combine oat meal/flour, protein powder (add more oat flour if omitting this), rolled oats, baking soda, and salt. If you don’t have oat meal/flour, you can make your own by putting 1/4 cup rolled oats in a food processor for a few minutes until finely ground
While the mixer is on low, slowly add dry ingredients to the wet ingredients.
Remove from stand and fold in banana and chocolate chips.
Scoop on prepared sheets by using a tablespoon, a small melon scoop, or a small ice cream scoop.
Cook 10-13 minutes or until barely golden brown at tops and edges. Remove from oven and cool on a wire rack.
