Ingredients
| 1 | Cup Steel Cut Oats |
| 1.5 | Cup Water |
| 1.5 | Cup Cashew or Almond Milk |
| 1 | tbsp Chia seeds |
| 1 | tbsp Flax Seeds, ground |
| 1 | Tsp Salt |
| .25 | Cup 100% Maple Syrup |
| 4 | Tbsp Peanut Butter, organic and unsalted |
Instructions
Place the water, milk, oats, syrup, 2 tbsp peanut butter, salt, and optional chia seeds and ground flax seeds in a large saucepan.
Bring to a boil then reduce to a simmer for 20 minutes. Stir the oats every 5-10 minutes to make sure they aren’t sticking to the bottom. Keep an eye on the saucepan – they tend to bubble up a bit and spill over if you’re not paying attention.
Remove saucepan from heat then stir in remaining 2 tbsp peanut butter. Oats will continue to thicken a little as they cool down.
Serve warm with fruit, jam, and/or a high-protein, low-sugar yogurt like Siggi’s chocolate yogurt.
