
Ingredients
1 | cup quinoa |
3 | cups Almond or Cashew Milk |
.25 | Cup Peanut Butter |
1/2 | tsp Cinnamon, ground |
1/4 | tsp Kosher Salt (optional) |
2 | cups frozen Cherries |
3 | tbsp Maple Syrup, pure |
2 | tbsp Chia Seeds |
Instructions
In a medium to large saucepan over medium heat, add quinoa, milk, peanut butter, cinnamon, and salt (if using). Bring to a boil then lower heat to a simmer and cover and cook until all the liquid is absorbed (approx. 15 min). Keep an eye on the mixture as it cooks – it bubbles up quick and will spill over the sides of your pot if you let it get and stay too hot. Remove from heat but keep covered until ready to serve.
In a small saucepan over medium heat add frozen cherries, maple syrup, and chia seeds. Bring to a boil then turn down heat and simmer until sauce thickens (approx. 15 min). Remove from heat.
Add quinoa to a bowl and top with cherry jam, a high protein yogurt like Siggi’s Cherry Yogurt, a splash of milk and serve.
