Sweet Potato Chips

Ingredients

1large sweet potato
1tbsp Garlic and Onion Powder or specialty seasoning of your choice
.25cup Frank's Hot Sauce
2tbsp Blue Cheese Dressing
.25cup Blue Cheese Crumbles

Instructions

Preheat oven to 200º.

Using a mandolin carefully slice the sweet potato into thin pieces. Lay parchment paper on two baking sheets and place each potato slice on the sheet without overlapping them – overlapping potatoes stick to each other when they cook.

Lightly spray potato slices with olive oil spray. Using your fingers spread the seasoning somewhat evenly over the slices, being sure to get at least a little seasoning on each slice. Use more to taste but keep in mind the chips will shrink by approximately 50% as they cook so the seasoning will become more concentrated.

Cook at least two hours or until chips are crispy. Let cool.

To make real hot sauce, heat 50% butter and 50% Frank’s Hot Sauce in a pan until melted together and just beginning to bubble. I skip the butter to save on calories.

Place chips on a plate. Drizzle hot sauce over chips followed by blue cheese dressing and top off with blue cheese crumbles. Can also sprinkle with chives (or scallions) and diced tomatoes.
