Zuchinni Chips

Ingredients

Servings:
4medium Zuchinni's substitute Sweet Potatoes or Beets for variety
16sprays Canned Extra Virgin Olive Oil, 1/2 second each spray
1tsp Sea Salt or seasonings of your choice

Instructions

Preheat oven to 250 degrees F. Line four baking sheets with parchment paper. Slice zucchini on a mandolin. Place the slices the baking sheets in a line (do not overlap) and place a paper towel on top. Press down to remove as much moisture as possible.

Add the olive oil to a small bowl and brush the olive oil on each zucchini slice using a pastry brush. Sprinkle a little salt onto each slice. Do not over season,  you can always add more salt later but you can’t de-salt!!

Bake 2 hours, checking every 15 minutes after the first hour. Slices will shrink, be slightly brown, and crispy.
