Fruit Cheese Pockets

Ingredients

1large Egg, whisked
6ounces Cream Cheese
1tsp Vanilla Bean Paste
5ounces Guava Paste
.5tbsp Lemon Juice, freshly squeezed
20sheets Filo Dough, thawed

Instructions

fruit cheese pocketsPreheat oven to 350º. Add 1/2 tbsp water to 1-1/2 tbsp of whisked egg and set aside–this is the egg wash.

In a food processor, purée together 6 ounces Cream Cheese, 1 tsp Vanilla Bean Paste (or extract), and remaining whisked egg. Set aside.

Heat 5 ounces of Guava Paste in microwave for one minute (so it can stir easily) then whisk in 1/2 tbsp fresh lemon juice. You can substitute guava for any flavor fruit paste, jam, or thickened compote.

On a flat surface, paint edge of two stacked filo sheets with the egg wash. Fold in half long ways. Add 1 tbsp cheese mixture approximately 1” from the edge then top with 1 tbsp fruit mixture. Paint edges of top, exposed sheet and fold over, end over end until a pocket is formed. Press together edges to make sure they’re sealed. Brush both sides of pocket with egg wash and place on parchment-lined baking sheet.

Bake 10 minutes, flip then bake another 10 minutes. Drizzle with honey and serve. Makes 8 pockets.
